Chile dry rub

olive oil

  1. Rub chicken thighs all over with your favorite chile dry rub. (Chicken can be rubbed, wrapped, and refrigerated up to 8 hours before grilling or broiling.)
  2. Lightly brush chicken thighs with olive oil and grill over hot coals (or broil 4 inches from heat source) 7 minutes per side or until cooked through.
  3. Let rest 5 minutes before cutting into thin slices.
