Makes 12 “muffins” (egg cups)

Ingredients:

  • 9 large Egg, fresh, whole, raw
  • 0.33 cup Colby and Monterey Jack Cheese shredded
  • 6 serving Bacon, Wright Smoked Bacon – 2 slices (1 slice per cup)
  • 1 cup, pieces or slices Mushrooms, fresh (roughly 6 criminis sliced
  • 1 serving Green Onion (fresh-1 stalk) (thinly sliced)

Instructions:

  1. Line cupcake pan with 1 piece bacon per cup. Scramble eggs and cheese in a bowl. Pour in egg, cheese, mixture to evenly fill each cup. Add even amount of mushroom and onion mix to each cup and dunk it into the egg mixture in each cup. Bake on 350 for 25-30 mins Serving Size: Makes 12 egg cups or “muffins”
