“Meaty” Vegetarian Chili

  • 2 tablespoons extra-virgin olive oil
  • 4 garlic cloves, thinly sliced
  • 2 medium carrots, peeled and chopped
  • 1 green bell pepper, chopped
  • 1/2 medium yellow onion, peeled and chopped
  • 6 ounces ounces frozen vegetarian ground beef (such as Boca Veggie Ground Crumbles), defrosted
  • 1 (28-ounce) can, diced tomatoes
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1 (15-ounce) can red kidney beans, rinsed and drained
  • 1 (8.5-ounce) can sweet, whole kernel corn, rinsed and drained
  • 1 tablespoon tomato paste
  • 1/2 cup water
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon crushed red pepper
  • 1 1/4 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded pepper Jack cheese
  • 1/2 cup sour cream
  • 1 cup thinly sliced green onion
