If you ask me, peanut butter and chocolate make the most magical combination ever. It’s a definite favorite, and I’ll never tire of it. It’s also hands down my favorite ice cream flavor. When we used to go to Baskin Robbins, it was a no-brainer for me.
But things get a little tricky when your favorite ice cream flavor becomes off limits. I can’t have dairy anymore, so what’s a girl to do? I’ll tell you what: a girl makes No-churn, Vegan Peanut Butter Chocolate Chip Ice Cream.
I actually have an ice cream maker but sometimes I’m just too lazy for that. So I love that this recipe gives you instant (kind of–it does have to freeze, after all) gratification.
You can make a delicious ice cream custard base out of delectable, creamy, rich coconut cream (this comes in a can; I buy mine at Trader Joe’s). If you can’t find coconut cream, chill cans of coconut milk and use the thick white stuff that solidifies on top. Or you could make a less-rich version with canned whole fat unsweetened coconut milk. (Yes, that would actually be the lighter version!) And then make it even richer with peanut butter (so good!). I used crunchy peanut butter because I liked the extra added crunch, but you could obviously go with smooth peanut butter instead. Later, when the base is cool, stir in chocolate chips. You could also stir in chocolate chunks instead, or honey-roasted peanuts.
Once it’s frozen, just scoop it up and pile it high in a bowl or cone for the most wonderful dessert—without the hassle of breaking out an ice cream maker, and with none of the stomachaches that dairy gives some of us. It’s a win-win!
